Tuna steak with salsa

This meal is both healthy and delicious but also very quick to make, so perfect if you’ve got in late from work and want a pick-me-up!

Ingredients

  • Tuna steaks
  • Cherry tomatoes
  • Yellow pepper
  • Green pepper
  • Avocado
  • Lime juice
  • Chopped coriander or coriander paste

How to make it

First, prepare the salsa:

Chop the cherry tomatoes into quarters. Chop the yellow and green pepper into small pieces. Make sure your avocadoes are ripe and ready to eat; peel, remove the stone and chop into small pieces. Add all the chopped ingredients to a small bowl. Squeeze over the lime juice, drizzle with olive oil, add the coriander and mix well.

Next, pan-fry the tuna steaks, being careful to make sure they’re cooked all the way through. Arrange the salsa on top of or next to the tuna steaks, depending on how you want it to look.

We served this with cold sweetcorn and couscous but I’d also suggest trying it with something like pan-fried courgette slices or crusty French bread with oil and balsamic vinegar.
